Bitterkoekjes (macaroons) are small, slightly chewy cookies made from almonds, bitter almonds, sugar and egg white. Now raw bitter almonds are less and less available, partly because it contains a substance that is toxic if you consume too much of it. Because apricot kernels are also part of the bitter almonds family, they are also regularly used to make macaroons.
